Introduction

Parippu vada, also known as dal vada, is a popular snack from Kerala, India. It is made with chana dal or split Bengal gram, which is soaked in water for a few hours and then ground into a coarse paste. The paste is then mixed with spices and deep-fried until crispy and golden brown. Parippu vada is usually served with coconut chutney or tomato ketchup. Ingredients

For the parippu vada, you will need the following ingredients:
  • 1 cup chana dal
  • 1 onion, finely chopped
  • 2 green chillies, finely chopped
  • 1 tsp ginger, grated
  • 1/4 tsp turmeric powder
  • 1/4 tsp asafoetida
  • 2 tbsp curry leaves, finely chopped
  • 2 tbsp coriander leaves, finely chopped
  • Salt to taste
  • Oil for deep frying
For the coconut chutney, you will need the following ingredients:
  • 1 cup grated coconut
  • 2 green chillies
  • 1 inch ginger
  • 1/2 tsp mustard seeds
  • 1/2 tsp urad dal
  • 1/2 tsp chana dal
  • 1/4 tsp asafoetida
  • 2 tbsp oil
  • Salt to taste

Instructions

Follow these instructions to make parippu vada:
  1. Soak the chana dal in water for 3-4 hours.
  2. Drain the water and grind the dal into a coarse paste.
  3. Add finely chopped onions, green chillies, grated ginger, turmeric powder, asafoetida, curry leaves, coriander leaves, and salt to the dal paste.
  4. Mix well and make small balls out of the mixture.
  5. Flatten the balls into patties and deep fry them in hot oil until golden brown and crispy.
  6. Drain the excess oil on a kitchen towel.
  7. Serve hot with coconut chutney or tomato ketchup.
Follow these instructions to make coconut chutney:
  1. Grind grated coconut, green chillies, and ginger into a fine paste.
  2. Heat oil in a pan and add mustard seeds, urad dal, chana dal, and asafoetida.
  3. When the mustard seeds start to splutter, add the ground coconut paste and salt.
  4. Cook for a few minutes until the raw smell of the coconut goes away.
  5. Remove from heat and serve with parippu vada.

Parippu vada is a deep-fried snack and should be consumed in moderation.
