Easy Fish Cakes Recipe

Here are the ingredients you will need:- 1 lb/450g white fish fillet
- 1 large potato
- 1 small onion
- 2 cloves of garlic
- 1 tablespoon of Dijon mustard
- 1 egg
- 1 tablespoon of chopped parsley
- 1 tablespoon of lemon juice
- 1/2 cup/65g of breadcrumbs
- Salt and pepper
- 2 tablespoons of olive oil
Instructions
1. Preheat your oven to 375°F/190°C. 2. Peel and chop the potato into small pieces. Boil them until they are soft and mashable. 3. In a frying pan, heat up one tablespoon of olive oil over medium heat. Add the chopped onion and garlic and cook until they are soft and transparent. 4. Cut the fish into small pieces and add them to the pan. 5. Cook the fish until it becomes opaque and soft. This should take about five minutes. 6. Remove the pan from heat and let it cool down for a few minutes. 7. In a large mixing bowl, combine the mashed potato, cooked onion and garlic, fish, Dijon mustard, egg, parsley, lemon juice, breadcrumbs, salt, and pepper. 8. Mix all the ingredients thoroughly until they are well combined. 9. Form the mixture into small patties. 10. In a frying pan, heat another tablespoon of olive oil over medium heat. 11. Add the fish cakes to the pan and cook them for about four minutes on each side, or until they are golden brown. 12. Transfer the fish cakes to a baking sheet and bake them for about 10 minutes in the preheated oven. 13. Serve the fish cakes hot with a side salad or coleslaw.Nutrition
