- 4 egg yolks
Note:
Make sure to use fresh red chillies for this recipe. You can adjust the amount of chillies according to your taste preference. If you don't like it too spicy, you can use fewer chillies.Instructions
Follow these steps to make chilli ice cream:- Remove the seeds from the chillies and chop them finely. Keep it aside.
- Take a medium-sized saucepan and add heavy cream, milk, sugar, and salt. Heat it over medium heat, stirring occasionally, until the sugar dissolves completely.
- Add the chopped chillies to the saucepan and let it simmer for about 5 minutes. This will infuse the chilli flavor into the mixture. Remove it from heat and let it cool for a few minutes.
- In a separate bowl, whisk the egg yolks until they become light and frothy.
- Slowly add the cream mixture to the egg yolks while whisking continuously. Make sure to add it in a slow and steady stream to avoid curdling the eggs.
- Pour the mixture back into the saucepan and heat it over medium heat, stirring continuously, until it thickens and coats the back of a spoon. This should take around 5-7 minutes.
- Remove it from heat and strain it through a fine-mesh sieve to remove any lumps or chilli pieces.
- Add vanilla extract and stir well.
- Let the mixture cool down to room temperature and then refrigerate it for at least 2-3 hours or until it's completely chilled.
- Pour the chilled mixture into an ice cream maker and churn it according to the manufacturer's instructions until it becomes smooth and creamy.
- Transfer it to an airtight container and freeze it for at least 2-3 hours or until it's firm.
Note:
If you don't have an ice cream maker, you can still make this recipe by pouring the chilled mixture into a freezer-safe container and stirring it every 30 minutes until it becomes firm.Nutrition
