Remove the biscuits from the oven and allow them to cool on the tray for 5 minutes before transferring them to a wire rack to cool completely. 8. To make the filling, beat the softened butter, icing sugar, and vanilla extract together until light and fluffy. 9. Spoon the filling into a piping bag fitted with a small round nozzle. 10. Spread a small amount of strawberry jam on the flat side of one biscuit. 11. Pipe a swirl of filling on top of the jam. 12. Sandwich the other biscuit on top of the filling, flat side down. 13. Repeat with the remaining biscuits and filling. 14. Dust with icing sugar before serving.
