Stifado Recipe
Introduction

To make stifado, you will need the following ingredients:- 2 pounds beef stew meat, cut into cubes
- 2 tablespoons olive oil
- 2 onions, sliced
- 3 cloves garlic, minced
- 1 tablespoon tomato paste
- 1 can diced tomatoes (14 ounces)
- 1 cup beef broth
- 1 cinnamon stick
- 4 whole cloves
- 2 bay leaves
- 1 teaspoon dried oregano
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 cup red wine vinegar
- 1/4 cup chopped fresh parsley, for garnish
Instructions
1. In a large pot or Dutch oven, heat the olive oil over medium-high heat. Add the beef and cook until browned on all sides, about 5 minutes. 2. Remove the beef from the pot and set aside. 3. Add the onions to the pot and cook until softened, about 5 minutes. 4. Add the garlic and tomato paste and cook for another minute. 5. Add the diced tomatoes, beef broth, cinnamon stick, cloves, bay leaves, oregano, salt, and pepper to the pot. 6. Stir to combine and bring the mixture to a simmer. 7. Return the beef to the pot and stir to combine. 8. Cover the pot and reduce the heat to low. 9. Simmer the stifado for 2-3 hours, or until the beef is tender and the sauce has thickened. 10. Stir in the red wine vinegar and cook for another 5 minutes. 11. Remove the cinnamon stick, cloves, and bay leaves from the pot. 12. Serve the stifado hot, garnished with chopped parsley.Nutrition
