Take the pork tenderloin and slice it into medallions that are about 1 inch thick. 3. Place the pork medallions into a large resealable plastic bag and pour the marinade over them. Seal the bag and massage the pork medallions to ensure that they are fully coated in the marinade. 4. Place the bag in the refrigerator and let the pork marinate for at least 30 minutes, or up to 2 hours. 5. When you are ready to cook the pork medallions, remove them from the marinade and discard any excess marinade. 6. Heat a large skillet over medium-high heat and add a tablespoon of olive oil. 7. Once the skillet is hot, add the pork medallions to the skillet, making sure not to overcrowd the pan.
