Paella Recipe Simple

For this recipe, you will need:- 2 cups of short-grain rice
- 4 cups of chicken broth
- 1 onion, chopped
- 3 cloves of garlic, minced
- 1 red bell pepper, chopped
- 1 green bell pepper, chopped
- 1 can of diced tomatoes
- 1 teaspoon of smoked paprika
- 1/4 teaspoon of saffron threads
- 1/2 pound of shrimp, peeled and deveined
- 1/2 pound of mussels, scrubbed and debearded
- 1/2 cup of frozen peas
- Salt and pepper to taste
- 2 tablespoons of olive oil
Instructions
1. Preheat your oven to 375°F. 2. In a large skillet, heat the olive oil over medium heat. 3. Add the onion, garlic, red bell pepper, and green bell pepper. Cook for about 5 minutes, stirring occasionally. 4. Add the smoked paprika and saffron threads. Cook for another minute. 5. Add the diced tomatoes and cook for another 5 minutes. 6. Add the rice and stir until it is coated with the tomato mixture. 7. Add the chicken broth and season with salt and pepper. 8. Bring to a boil, then reduce heat to low and simmer for 15 minutes. 9. Add the shrimp, mussels, and frozen peas to the skillet. 10. Cover the skillet with foil and transfer it to the oven. 11. Bake for 20-25 minutes or until the rice is tender and the seafood is cooked through. 12. Remove from the oven and let it rest for 5 minutes. 13. Serve hot with lemon wedges.Nutrition
