- 1 teaspoon ground coriander
- 1/2 teaspoon turmeric powder
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- Bamboo skewers (soaked in water for at least 30 minutes)
- 1/2 cup peanut butter
- 1/4 cup coconut milk
- 2 tablespoons soy sauce
- 2 tablespoons brown sugar
- 1 tablespoon lime juice
- 1 teaspoon chili sauce (optional)
Instructions
Here is how you can make satay at home:- Cut the chicken (or beef) into small, bite-sized pieces.
- In a large bowl, whisk together the coconut milk, soy sauce, brown sugar, curry powder, cumin, coriander, turmeric powder, garlic powder, onion powder, salt, and black pepper.
- Add the chicken (or beef) to the bowl and toss to coat with the marinade. Cover and refrigerate for at least 2 hours (or overnight).
- When ready to cook, preheat your grill or broiler to high heat.
- Thread the chicken (or beef) onto the bamboo skewers. Be sure to leave some space between each piece so that they cook evenly.
- Grill or broil the satay for 2-3 minutes per side, or until lightly charred and cooked through.
- While the satay is cooking, make the peanut sauce. In a small saucepan, combine the peanut butter, coconut milk, soy sauce, brown sugar, lime juice, and chili sauce (if using). Cook over low heat, stirring constantly, until the sauce is smooth and creamy.
- Transfer the satay to a serving platter and drizzle with the peanut sauce. Serve with sliced onions and cucumber on the side.
