Introduction

Christmas is a time of celebration and joy, and what better way to celebrate than with a delicious Christmas cake? There are many recipes out there, but we believe we have found the best one. Ingredients

The ingredients you will need for this recipe are:
  • 225g unsalted butter, softened
  • 225g dark brown sugar
  • 4 large eggs
  • 225g plain flour
  • 2 tsp baking powder
  • 1 tsp mixed spice
  • 1 tsp ground cinnamon
  • 1/2 tsp ground ginger
  • 100g ground almonds
  • 100g raisins
  • 100g currants
  • 100g chopped mixed peel
  • 100g glace cherries, halved
  • 50g flaked almonds
  • 4 tbsp brandy

Instructions

1. Preheat your oven to 150C/130C fan/gas 2. Grease a 20cm round cake tin and line the bottom and sides with baking paper. 2. In a large bowl, cream together the butter and dark brown sugar until pale and fluffy. 3. Beat in the eggs one at a time, making sure each one is fully incorporated before adding the next. 4. Sift in the flour, baking powder, mixed spice, ground cinnamon and ground ginger. Fold in gently until fully combined. 5. Add the ground almonds, raisins, currants, chopped mixed peel, halved glace cherries, flaked almonds and brandy. Stir well to combine. 6. Spoon the mixture into the prepared tin and level the surface with a spatula. 7. Bake in the preheated oven for 2 1/2 to 3 hours, or until a skewer inserted into the centre of the cake comes out clean. 8. Remove the cake from the oven and leave to cool in the tin for 10 minutes. 9. Turn the cake out onto a wire rack and leave to cool completely. 10. Once cool, you can decorate the cake with icing, marzipan, or whatever you prefer.
