Vegan Risotto Recipe
Introduction
Risotto is a classic Italian dish that is traditionally made with butter, cheese, and chicken broth. However, it is possible to make a delicious vegan version of this dish that is just as creamy and flavorful. For this vegan risotto recipe, you will need:- 1 ½ cups Arborio rice
- 4 cups vegetable broth
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 cup mushrooms, sliced
- 1 cup frozen peas

- 2 tbsp nutritional yeast
- 1 tbsp olive oil
- Salt and pepper to taste
Instructions
Step 1: Prepare the ingredients
Start by preparing all the ingredients. Finely chop the onion, mince the garlic, and slice the mushrooms. Rinse the Arborio rice in cold water and set aside.Step 2: Saute the onion and garlic
In a large saucepan, heat the olive oil over medium heat. Add the onions and garlic and saute for 2-3 minutes until the onions are translucent.Step 3: Add the mushrooms and rice
Add the sliced mushrooms to the saucepan and saute for another 2-3 minutes until the mushrooms are tender. Add the Arborio rice to the saucepan and stir well to coat the rice in the oil and onion mixture.Step 4: Add the vegetable broth
Add 1 cup of vegetable broth to the saucepan and stir well. Let the rice simmer in the broth until the broth has been absorbed by the rice. Add another cup of broth and repeat the process.
