Lentil Bolognese Recipe

For this lentil bolognese recipe, you will need:- 1 cup of dried brown lentils
- 1 onion, chopped
- 2 cloves of garlic, minced
- 2 carrots, diced
- 2 stalks of celery, diced
- 1 red bell pepper, diced
- 1 can of diced tomatoes
- 2 tablespoons of tomato paste
- 1 teaspoon of dried oregano
- 1 teaspoon of dried basil
- 1 teaspoon of paprika
- 1 tablespoon of olive oil
- Salt and pepper to taste
- Optional: grated parmesan cheese and fresh parsley for serving
Instructions
1. Rinse the lentils and add them to a pot with 2 cups of water. Bring to a boil, then reduce the heat and let simmer for 20-25 minutes or until the lentils are tender. Drain any excess water and set the lentils aside. 2. In a large skillet or pot, heat the olive oil over medium heat. Add the chopped onion and garlic and sauté for 2-3 minutes or until the onion is translucent. 3. Add the diced carrots, celery, and red bell pepper to the skillet and continue to sauté for another 5-7 minutes or until the vegetables are tender. 4. Add the can of diced tomatoes and tomato paste to the skillet and stir to combine with the vegetables. 5. Add the cooked lentils to the skillet and stir to combine with the vegetables and tomato sauce. 6. Add the dried oregano, basil, paprika, salt, and pepper to the skillet and stir to combine. 7. Let the lentil bolognese simmer for 10-15 minutes or until the sauce has thickened and the flavors have melded together. 8. Serve the lentil bolognese over your favorite pasta or zucchini noodles.
