Instructions

1. To make the pastry, combine the flour, salt, and butter in a large bowl. Use your fingertips to rub the butter into the flour until the mixture resembles breadcrumbs. 2. Add the egg and 2 tbsp of cold water to the mixture and stir until a dough forms. If the mixture is too dry, add another tablespoon of water. 3. Turn the dough out onto a lightly floured surface and knead gently until it comes together in a smooth ball. Wrap the dough in cling film and refrigerate for at least 30 minutes. 4. Preheat the oven to 200°C/180°C fan/gas mark 6. 5. To make the filling, heat the olive oil in a large frying pan over medium heat. Add the onion and garlic and sauté until softened, about 5 minutes. 6. Add the potato and carrots to the pan and cook for 10 minutes, stirring occasionally. 7. Add the zucchini and red pepper to the pan and cook for another 5 minutes, or until all of the vegetables are tender. 8. Stir in the thyme, oregano, salt, and pepper. 9. On a lightly floured surface, roll out the pastry to a thickness of about 3mm. Cut out circles of about 15cm in diameter. 10. Spoon a generous amount of the vegetable mixture onto one half of each circle, leaving a 1cm border around the edge. 11. Fold the other half of the pastry over the filling and press the edges together to seal. Crimp the edges using a fork. 12. Place the pasties on a baking tray lined with parchment paper and brush with beaten egg. 13. Bake for 25-30 minutes, or until the pastry is golden brown and crisp. 14. Serve hot or cold.
