Basic Risotto Recipe

- Salt and pepper to taste
Instructions
- Heat the chicken or vegetable broth in a pot and keep it warm on low heat.
- In a separate large pot, heat the olive oil and 1 tablespoon of butter over medium heat.
- Add the chopped onion and garlic and sauté for about 3-5 minutes until the onion is translucent.
- Add the arborio rice and stir constantly for 2-3 minutes until the rice is lightly toasted and coated with the onion and garlic mixture.
- Add the white wine and stir constantly until the wine is absorbed by the rice.
- Add a ladleful of warm broth to the rice and stir constantly until the broth is absorbed.
- Continue adding the broth one ladleful at a time and stirring constantly until the rice is cooked al dente, which should take about 20-25 minutes.
- Remove the pot from the heat and stir in the remaining 2 tablespoons of butter and the grated parmesan cheese until they are melted and well combined.
- Season with salt and pepper to taste.
- Let the risotto rest for a few minutes before serving.
