- 4 cups vegetable broth
- 1 cup water
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 tbsp. ginger, grated
- 2 carrots, sliced
- 2 stalks celery, sliced
- 2 cups kale, chopped
- 1 cup mushrooms, sliced
- 1 block tofu, cubed
- 2 tbsp. soy sauce
- 1 tbsp. sesame oil
- salt and pepper to taste
Instructions
1. Cook the noodles according to package instructions. Drain and set aside. 2. In a large pot, heat the sesame oil over medium heat. 3. Add the onions, garlic, and ginger and sauté for 2-3 minutes, until fragrant. 4. Add the carrots and celery and cook for another 5 minutes, until slightly softened. 5. Add the vegetable broth and water and bring to a boil. 6. Reduce the heat and let simmer for 10 minutes. 7. Add the kale, mushrooms, and tofu and continue simmering for another 5-7 minutes, until vegetables are tender. 8. Stir in the soy sauce and season with salt and pepper to taste. 9.
