  • 1 pack of fresh lasagna sheets
  • 150g mozzarella cheese
  • sea salt
  • freshly ground black pepper

Instructions

1. Preheat the oven to 180°C/350°F/gas 4. 2. Peel and finely chop the onions, garlic, carrots, and celery. 3. Pick and finely chop the rosemary and thyme leaves. 4. Heat a large pan over medium heat and add a splash of olive oil. 5. Add the chopped vegetables, bay leaves, and herbs to the pan. 6. Cook for 10-15 minutes, or until the vegetables are softened and lightly golden. 7. Add the minced beef and break it up with a wooden spoon. 8. Cook for 10-15 minutes, or until the meat is browned. 9. Stir in the tinned tomatoes, tomato puree, beef stock cube, and red wine. 10. Bring the sauce to a simmer and cook for 1 hour, stirring occasionally. 11. Season with salt and pepper to taste. 12. To make the white sauce, pour the milk into a pan. 13. Peel and halve the onion and add it to the milk with the bay leaves and clove. 14. Gently heat the milk until it just starts to bubble, then remove from the heat and set aside for 10 minutes to infuse. 15. Strain the milk into a jug and discard the onion, bay leaves, and clove. 16. Melt the butter in a clean pan over low heat. 17. Stir in the flour and cook for 1-2 minutes, stirring constantly. 18. Gradually whisk in the infused milk, a little at a time, until you have a smooth sauce. 19. Stir in the Parmesan cheese and season with salt and pepper to taste. 20. To assemble the lasagna, spoon a third of the meat sauce into the bottom of a large baking dish. 21. Cover the sauce with a layer of lasagna sheets, then spoon over a third of the white sauce. 22. Repeat the layers twice more, finishing with a layer of white sauce on top. 23. Tear the mozzarella cheese into small pieces and scatter over the top of the lasagna. 24.
