- 2 tbsp demerara sugar
Instructions
1. Preheat your oven to 200C/180C fan/gas mark 6. Line a muffin tin with paper cases.2. In a large mixing bowl, sift together the flour and baking powder.
3. Stir in the caster sugar.
4. In a separate bowl, whisk together the milk, egg, melted butter, and vanilla extract.
5. Pour the wet ingredients into the dry ingredients and mix until just combined.
6. Gently fold in the blueberries.
7. Spoon the batter into the paper cases until they are about 2/3 full.
8. Sprinkle demerara sugar on top of each muffin.
9. Bake in the preheated oven for 20-25 minutes, or until a toothpick comes out clean.
