Instructions

 - Roll out the pastry on a floured surface to a thickness of about 3mm.
 - Cut out circles of pastry using a 15cm cutter.
 - Heat the olive oil in a frying pan and add the chopped onion.
 - Cook the onion over a medium heat for about 5-7 minutes until it is soft and translucent.
 - Add the dried thyme to the pan and cook for a further minute.
 - Season with salt and pepper to taste.
 - Divide the onion mixture between the pastry circles, placing it in the center of each circle.
 - Top the onion mixture with grated cheddar cheese.
 - Brush the edges of the pastry circles with beaten egg.
 - Fold the pastry over the filling to form a half-moon shape.
 - Crimp the edges of the pastry together to seal.
 - Brush the tops of the pasties with beaten egg.
 - Make a small slit in the top of each pasty to allow steam to escape during cooking.
 - Place the pasties on a baking tray lined with baking paper.
 - Bake in the preheated oven for 25-30 minutes or until golden brown.
