Instructions
1. Preheat the oven to 180°C/160°C fan/gas mark 4. Line a 12-hole muffin tin with paper cases. 2. In a large mixing bowl, beat the butter and sugar together until light and fluffy. 3. Add the eggs, one at a time, beating well after each addition. 4. Sift the flour and baking powder into the bowl and fold in using a metal spoon. 5. Add the milk and vanilla extract and mix until the batter is smooth. 6. Divide the mixture evenly between the paper cases. 7. Bake for 20-25 minutes or until the cupcakes are golden and spring back when lightly pressed. 8. Remove the cupcakes from the oven and leave them to cool in the tin for 5 minutes before transferring them to a wire rack to cool completely. 9. To make the buttercream, beat the butter in a mixing bowl until it is soft and creamy. 10. Sift the icing sugar into the bowl and mix until smooth. 11.
