For the stew:- 1 pound beef stew meat, cut into bite-sized pieces
- 2 tablespoons olive oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 3 carrots, sliced
- 3 celery stalks, sliced
- 6 cups beef broth
- 2 bay leaves
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup frozen peas
- 1/4 cup chopped fresh parsley
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup unsalted butter, melted
- 1/2 cup milk
- 1/4 cup chopped fresh parsley
Instructions
1. In a large pot or Dutch oven, heat the olive oil over medium-high heat. Add the beef and cook until browned on all sides, about 5 minutes. 2. Add the onion and garlic to the pot and cook until softened, about 3 minutes. 3. Add the carrots and celery and cook for another 5 minutes. 4. Pour in the beef broth, bay leaves, thyme, rosemary, salt, and pepper. Bring to a boil, then reduce the heat to low and let simmer for 1 hour. 5. While the stew is simmering, make the dumplings. In a medium bowl, whisk together the flour, baking powder, salt, and pepper. Stir in the melted butter, milk, and parsley until a dough forms. 6. Drop tablespoon-sized portions of the dumpling dough onto the surface of the simmering stew. Cover the pot and let cook for 15 minutes. 7. Remove the lid and add the frozen peas to the stew. Let cook for another 5 minutes, or until the dumplings are cooked through and the peas are heated through. 8. Serve the stew hot, garnished with additional chopped parsley if desired.Nutrition
