- 2 cloves garlic, minced
- 2 cups beef broth
- 1 can (14.5 ounces) diced tomatoes
- 2 tablespoons paprika
- 1 teaspoon caraway seeds
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 cups diced potatoes
- 1 cup diced carrots
- 1 cup sour cream
- 1/4 cup chopped fresh parsley
Instructions
- Preheat your oven to 350 degrees F.
- In a large bowl, toss the beef stew meat with the flour until well coated.
- Heat the olive oil in a large skillet over medium-high heat. Add the beef and cook until browned on all sides, about 5 minutes.
- Add the onion and garlic to the skillet and cook until softened, about 3 minutes.
- Pour in the beef broth and diced tomatoes, scraping up any browned bits from the bottom of the skillet.
- Stir in the paprika, caraway seeds, salt, and black pepper.
- Add the potatoes and carrots to the skillet, stirring to combine.
- Transfer the mixture to a large baking dish.
- Cover the dish with foil and bake for 1 hour.
- Remove the foil and continue baking for an additional 30 minutes, or until the beef is tender and the vegetables are cooked through.
- Remove the baking dish from the oven and let it cool for a few minutes.
- Stir in the sour cream and chopped parsley until well combined.
- Serve the goulash hot, garnished with additional parsley if desired.
