For the mince:- 1 lb. beef mince
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 carrots, peeled and diced
- 2 celery stalks, diced
- 2 tbsp. tomato paste
- 1 tsp. dried thyme
- 1 tsp. dried rosemary
- 1 bay leaf
- 2 cups beef stock
- 2 tbsp. olive oil
- Salt and pepper, to taste
- 1 cup self-raising flour
- 1/2 tsp. salt
- 1/2 tsp. baking powder
- 2 tbsp. butter, softened
- 1/2 cup milk
Instructions
1. Preheat your oven to 350°F. 2. In a large skillet, heat the olive oil over medium-high heat. 3. Add the onion and garlic and cook until the onion is soft and translucent. 4. Add the beef mince and cook until browned, breaking it up with a wooden spoon as it cooks. 5. Add the carrots and celery and cook for another 5 minutes. 6. Stir in the tomato paste, thyme, rosemary, bay leaf, beef stock, salt, and pepper. 7. Bring the mixture to a simmer, then reduce the heat and let it cook for 20 minutes. 8. While the mince is cooking, make the dumplings. 9. In a mixing bowl, combine the flour, salt, and baking powder. 10. Add the butter and use your fingertips to rub it into the flour mixture until it resembles breadcrumbs. 11. Gradually add the milk, stirring until a soft dough forms. 12. Divide the dough into 8 equal pieces and roll each one into a ball. 13. After the mince has cooked for 20 minutes, remove the bay leaf and discard. 14. Drop the dumpling balls onto the surface of the mince, spacing them out evenly. 15. Cover the skillet with a lid and transfer it to the oven. 16. Bake for 20-25 minutes, or until the dumplings are golden brown and cooked through. 17. Remove the skillet from the oven and let it cool for a few minutes before serving. 18.
