Recipe For Cottage Cheese
Introduction
Cottage cheese is a fresh cheese that is made from the curd of cow’s milk. It is a healthy and nutritious cheese that is low in calories and high in protein. Cottage cheese can be eaten plain or used in various recipes like salads, sandwiches, dips, and desserts.Ingredients
The ingredients required for making cottage cheese are:- 1 gallon of whole milk
- 1/4 cup of white vinegar
- 1 teaspoon of salt
Note:
- Make sure the milk is not ultra-pasteurized as it will not curdle properly.
- You can also use lemon juice instead of vinegar.
Instructions
Follow these steps to make cottage cheese at home:- Pour the milk into a large pot and heat it over medium-high heat until it reaches 180°F. Stir occasionally to prevent the milk from scorching.
- Remove the pot from the heat and add the vinegar. Stir gently for a few seconds until the curd starts to separate from the whey.
- Cover the pot and let it sit undisturbed for 10-15 minutes until the curd is fully separated.
- Line a colander with cheesecloth and place it over a large bowl to collect the whey.
- Carefully ladle the curd into the cheesecloth-lined colander, making sure not to break up the curd too much.
- Gather the edges of the cheesecloth and tie them together to form a bundle.
- Hang the bundle over a bowl or the sink and let it drain for 1-2 hours until most of the whey has been expelled.
- Remove the cheesecloth and transfer the cottage cheese to a bowl.
- Add salt and mix well.
- Store the cottage cheese in an airtight container in the refrigerator for up to 1 week.
