Red Curry Paste Recipe

The following ingredients are needed to make the red curry paste:- 10-15 dried red chili peppers
- 2 tablespoons of coriander seeds
- 1 tablespoon of cumin seeds
- 1 tablespoon of peppercorns
- 2-3 shallots
- 1 head of garlic
- 2-3 stalks of lemongrass
- 1 knob of ginger
- 1 tablespoon of shrimp paste
- 1 teaspoon of salt
Instructions
Follow the steps below to make the red curry paste:- Soak the dried red chili peppers in warm water for about 15 minutes to soften them.
- While the peppers are soaking, dry roast the coriander seeds, cumin seeds, and peppercorns in a pan over medium heat until fragrant.
- Remove the seeds from the chili peppers and chop them into small pieces.
- Peel and finely chop the shallots and garlic.
- Cut off the top and bottom of the lemongrass stalks and remove the tough outer layers. Finely chop the tender inner stalks.
- Peel and chop the ginger into small pieces.
- In a mortar and pestle or a food processor, grind the chili peppers, roasted spices, shallots, garlic, lemongrass, ginger, and shrimp paste together into a smooth paste.
- Add the salt and mix well.
- Your red curry paste is now ready to use!
