- 2 tablespoons of olive oil
- 1 tablespoon of minced garlic
- 1 teaspoon of dried thyme
- 1 teaspoon of dried oregano
- 1 teaspoon of dried basil
- Salt and pepper to taste
- 1 cup of chicken broth
- 1 cup of uncooked white rice
- 1 can of diced tomatoes
- 1 can of corn
- 1 can of black beans
- 1 cup of shredded cheddar cheese
- 2 tablespoons of chopped fresh parsley
Instructions
Now that you have all the ingredients, let's get started with the instructions:- Preheat your oven to 375°F (190°C).
- Place a large skillet over medium-high heat and add the olive oil.
- Season the chicken breasts with salt and pepper and add them to the skillet.
- Cook the chicken until it is browned on both sides, about 5 minutes per side.
- Remove the chicken from the skillet and set it aside.
- Add the minced garlic, dried thyme, dried oregano, and dried basil to the skillet.
- Cook for 1 minute, stirring constantly.
- Add the chicken broth, rice, diced tomatoes (with their juice), corn (drained), and black beans (drained and rinsed) to the skillet.
- Bring the mixture to a simmer and then reduce the heat to low.
- Cover the skillet and let it cook for 20-25 minutes, or until the rice is tender.
- Fluff the rice with a fork and then place the chicken breasts on top of the rice mixture.
- Sprinkle the shredded cheddar cheese on top of the chicken and rice mixture.
- Bake the skillet in the preheated oven for 10-15 minutes, or until the cheese is melted and bubbly.
