- 1 teaspoon dried rosemary
- 1 teaspoon dried oregano
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 cups potatoes, sliced
- 2 cups carrots, sliced
- 1 cup frozen peas

Follow these instructions to make pork casserole:- Preheat your oven to 350°F.
- In a large Dutch oven or casserole dish, heat the olive oil over medium-high heat. Add the pork and cook until browned on all sides. Remove the pork from the pot and set aside.
- Add the onion and garlic to the pot and cook until softened.
- Add the diced tomatoes, tomato sauce, chicken broth, thyme, rosemary, oregano, salt, and black pepper to the pot. Stir to combine.
- Add the pork back to the pot and stir well to coat it with the sauce.
- Add the sliced potatoes and carrots to the pot and stir to combine.
- Cover the pot with a lid and place it in the preheated oven.
- Cook for 1 hour and 30 minutes or until the pork is tender and the vegetables are cooked through.
- Remove the pot from the oven and stir in the frozen peas.
- Return the pot to the oven and cook for an additional 10 minutes or until the peas are heated through.
- Remove the pot from the oven and let it rest for 5 minutes before serving.
