Savoury Crepe Recipe

For the crepes, you will need:- 1 cup all-purpose flour
- 1 1/2 cups milk
- 2 eggs
- 1/4 teaspoon salt
- 2 tablespoons melted butter
- 1/4 cup finely chopped fresh herbs (optional)
- Ham and cheese
- Spinach and feta
- Mushrooms and onions
- Chicken and broccoli
Instructions
1. In a large mixing bowl, whisk together the flour, milk, eggs, salt, and melted butter until the batter is smooth. If you’re using fresh herbs, stir them in now. 2. Let the batter rest for at least 10 minutes to allow the flour to absorb the liquid. 3. Heat a non-stick skillet or crepe pan over medium heat. Once it’s hot, ladle in about 1/4 cup of the batter, swirling the pan to coat the bottom evenly. 4. Cook the crepe for 1-2 minutes, until the edges start to curl up and the bottom is golden brown. Flip the crepe and cook for another 30 seconds to 1 minute, until the other side is golden brown as well. 5. Repeat with the remaining batter, stacking the cooked crepes on a plate until you’re ready to fill them. 6. To make the filling, cook your chosen ingredients in a pan until they’re tender and heated through. Season with salt and pepper to taste. 7. Spoon the filling onto one half of each crepe, then fold the other half over the top to create a half-moon shape. 8. Serve the crepes hot, garnished with extra herbs or grated cheese if desired.Nutrition
