- 1 cup cooked shrimp, chicken, or tofu, sliced into thin strips
- 1 cup cooked rice noodles
- 1/2 cup fresh mint leaves
- 1/2 cup fresh cilantro leaves
- 1/2 cup fresh basil leaves
- 1/4 cup hoisin sauce
- 1 tablespoon soy sauce
- 1 tablespoon rice vinegar
- 1 tablespoon honey
- 1 garlic clove, minced
- 1 tablespoon water
Instructions
1. Prepare all the ingredients by slicing, julienning, or cooking them as necessary. 2. Fill a large bowl with warm water. Dip one rice paper wrapper into the water for a few seconds until it softens and becomes pliable. 3. Place the rice paper wrapper on a clean and damp kitchen towel or cutting board. Arrange a few slices of each vegetable, protein, and herbs on the bottom third of the wrapper, leaving some space on the sides. 4. Add a small handful of rice noodles on top of the vegetables and protein. 5. Fold the sides of the wrapper towards the center, then roll the bottom of the wrapper tightly over the filling, using your fingers to tuck and roll it neatly. 6. Place the finished summer roll on a plate or tray, and cover it with another damp kitchen towel or plastic wrap to prevent it from drying out. Repeat with the remaining wrappers and filling. 7.
