For this pasta recipe, you will need the following ingredients:- 400g dried spaghetti
- 2 garlic cloves, finely chopped
- 1 onion, finely chopped
- 1 red pepper, chopped
- 1 yellow pepper, chopped
- 1 courgette, chopped
- 1 tsp dried oregano
- 1 tbsp tomato puree
- 1 can chopped tomatoes
- Low-calorie cooking spray
- Salt and pepper to taste
Instructions
Follow these simple steps to make this delicious pasta dish:- Cook the spaghetti according to the instructions on the packet. Drain and set aside.
- Spray a large pan with low-calorie cooking spray and place over a medium heat.
- Add the chopped onion and garlic to the pan and cook for 2-3 minutes until softened.
- Add the chopped peppers and courgette to the pan and cook for a further 4-5 minutes.
- Add the dried oregano, tomato puree and chopped tomatoes to the pan and stir well.
- Season with salt and pepper to taste.
- Simmer the sauce for 10-15 minutes until it has thickened slightly.
- Add the cooked spaghetti to the pan and mix well with the sauce.
