Preheat your oven to 200°C. Roll out two-thirds of the pastry on a floured surface and use it to line a 20cm springform cake tin. Add the pork filling to the tin and press it down firmly. Roll out the remaining pastry to form the top of the pie. Use a knife to make a small hole in the center of the pastry lid. Brush the beaten egg over the top of the pie. Bake the pie for 30 minutes, then reduce the oven temperature to 180°C and continue baking for an additional 60 minutes.

While the pie is baking, make the jelly. Soak the gelatine leaf in cold water for 5 minutes. In a small saucepan, heat the chicken stock until it comes to a boil. Remove from heat and stir in the soaked gelatine leaf until dissolved.

Once the pie is finished baking, remove it from the oven and let it cool for 10 minutes. Pour the jelly into the hole in the center of the pastry lid until it reaches the top of the filling. Let the pie cool completely, then chill in the fridge for at least 2 hours.
