For the filling:- 500g rhubarb, trimmed and cut into small chunks
- 100g caster sugar
- 1 tsp vanilla extract
- 1 tbsp cornflour
- 175g plain flour

- 75g caster sugar
- 50g porridge oats
- 1 tsp ground cinnamon
Instructions
1. Preheat your oven to 200°C/180°C fan/gas 6. 2. In a large bowl, mix the rhubarb, caster sugar, vanilla extract, and cornflour together. 3. Pour the mixture into a baking dish and set aside. 4. In another bowl, mix together the flour and chilled, diced butter. 5. Rub the mixture between your fingers until it resembles breadcrumbs. 6. Add the caster sugar, porridge oats, and ground cinnamon to the bowl and mix well. 7. Spread the crumble mixture over the top of the rhubarb mixture. 8.
