In a saucepan, combine granulated sugar and water. Heat over medium-high heat until the mixture reaches 240°F (115°C) on a candy thermometer. 4. With the mixer running, slowly pour the hot sugar syrup into the aquafaba. Be careful not to pour it on the beaters. 5. Continue to beat the mixture for about 10-15 minutes until it becomes thick and glossy. 6. Add vanilla extract and beat for an additional 30 seconds. 7. In a separate bowl, mix together cornstarch and powdered sugar. 8. Grease an 8-inch square baking pan and dust it with the cornstarch mixture. 9. Pour the marshmallow mixture into the prepared pan and smooth the top with a spatula. 10. Dust the top with more of the cornstarch mixture. 11. Let the marshmallows sit at room temperature for at least 6 hours or overnight until set. 12. Once set, use a knife to loosen the edges of the marshmallows from the pan. 13. Dust a cutting board with the cornstarch mixture and turn the marshmallows out onto it. 14. Cut the marshmallows into squares with a sharp knife. 15. Dust each square with more of the cornstarch mixture to prevent sticking.
