For the broth:- 4 lbs chicken feet and wings
- 1 lb pork neck bones
- 1 onion, sliced
- 2-inch piece of ginger, sliced
- 1 head of garlic, halved
- 1 tablespoon vegetable oil
- 2 quarts water
- 1 cup sake
- 1 cup soy sauce
- 1 cup mirin
- 4 packs of ramen noodles
- 4 cups bean sprouts
- 4 cups spinach
- 4 eggs, soft-boiled
- 4 green onions, sliced
- 4 sheets of nori
- 1 cup sliced pork belly
- 1 cup sliced mushrooms
- 1 tablespoon sesame oil
Instructions
1. Preheat your oven to 450°F. Rinse the chicken feet and wings under cold water and pat dry with paper towels. 2. Toss the chicken feet and wings and pork neck bones with vegetable oil and arrange them in a single layer on a baking sheet. 3. Roast the bones in the oven for about 30 minutes, or until browned. 4. In a large pot, add the roasted bones, onion, ginger, garlic, water, sake, soy sauce, and mirin. Bring to a boil, then reduce the heat to low and simmer for 6-8 hours. 5. Strain the broth through a fine mesh strainer and discard the solids. Skim off any excess fat from the top of the broth. 6. Bring a large pot of water to a boil and cook the ramen noodles according to the package instructions. Drain and set aside. 7. In a separate pot, blanch the bean sprouts and spinach until just wilted. Drain and set aside. 8. In a small pot, boil the eggs for 6-7 minutes for a soft-boiled yolk. Peel and set aside. 9. In a large pan, heat the sesame oil over medium-high heat. Add the sliced pork belly and mushrooms and cook until browned. 10. To assemble the ramen bowls, divide the noodles among 4 large bowls. Add the bean sprouts, spinach, sliced green onions, and sliced pork belly and mushrooms. Pour the hot broth over the top of the noodles and toppings. 11.
