For the meringue base, you will need the following ingredients:- 4 large egg whites
- 225g caster sugar
- 1 tsp white wine vinegar
- 1 tsp cornflour
- 300ml double cream
- Selection of fresh fruit (such as strawberries, raspberries, and kiwi fruit)
Instructions
1. Preheat the oven to 150°C/fan 130°C/gas 2. Line a baking tray with baking paper. 2. Whisk the egg whites in a clean bowl until stiff peaks form. 3. Gradually add the caster sugar, a spoonful at a time, whisking well between each addition. 4. Once all the sugar has been added, continue to whisk for a few minutes until the meringue is thick and glossy. 5. Add the white wine vinegar and cornflour and whisk again until combined. 6. Spoon the meringue onto the prepared baking tray and use a palette knife to shape it into a circle, making a slight dip in the center. 7. Place the meringue in the oven and immediately reduce the temperature to 140°C/fan 120°C/gas 1. 8. Bake for 1 hour, then turn off the oven and leave the meringue inside to cool completely. 9. Once the meringue is completely cool, whip the cream until it forms soft peaks. 10. Spoon the whipped cream onto the center of the meringue and spread it out to the edges. 11.
