Instructions
1. Begin by seasoning the pork chops generously with salt and pepper on both sides. 2. Heat the olive oil in a large skillet over medium heat. Add the pork chops and cook for 2-3 minutes on each side or until they are nicely browned. 3. Remove the pork chops from the skillet and set aside. 4. Add the onion, green bell pepper, and red bell pepper to the skillet and sauté for 3-4 minutes or until they are softened. 5. Add the garlic, oregano, cumin, and bay leaf to the skillet and cook for another minute. 6. Add the diced tomatoes, tomato paste, and chicken broth to the skillet and stir to combine. 7. Return the pork chops to the skillet and spoon the sauce over them. 8. Cover the skillet and reduce the heat to low. Simmer for 25-30 minutes or until the pork chops are fully cooked and tender. 9.
