Recipe For Pork Curry

- 1 onion, chopped

- 2 teaspoons of curry powder
- 1 teaspoon of cumin
- 1 teaspoon of coriander
- 1/2 teaspoon of turmeric
- 1/2 teaspoon of salt
- 1/4 teaspoon of cayenne pepper
- 1 can of diced tomatoes
- 1 can of coconut milk
- 1 tablespoon of honey
- 1 tablespoon of cornstarch
- 1/4 cup of water
- Chopped cilantro for serving
Instructions
1. Heat the vegetable oil in a large skillet over medium-high heat. 2. Add the onion and sauté for 2-3 minutes or until translucent. 3. Add the garlic and ginger and sauté for an additional minute. 4. Add the pork to the skillet and cook for 5-7 minutes or until browned on all sides. 5. Add the curry powder, cumin, coriander, turmeric, salt, and cayenne pepper to the skillet and stir well. 6. Add the diced tomatoes, coconut milk, and honey to the skillet and stir well. 7. Bring the mixture to a simmer and let it cook for 20-25 minutes or until the pork is tender. 8. In a small bowl, whisk together the cornstarch and water. 9. Add the cornstarch mixture to the skillet and stir well. 10. Let the mixture simmer for an additional 5-10 minutes or until the sauce has thickened. 11.
